Quick & Healthy Chicken Rolls
I'm opening up a new category 'Quick Lunches'. I've been trying to eat a little more healthy these days, while still not compromising on taste. It's very difficult to continue on any regime where I feel I'm giving up on major food groups or have major dietary restrictions. I want to have a balance in my food intake, try and cut down on my eating out tendencies, and yes, move around a bit more.
All these years, I've rarely cooked meat or fish at home. Back in Kerala we used to have fish atleast once a day. So when I moved out, since its difficult to get fish for just one person, and also since my mum doesn't like the idea of me having chicken everyday, I never used to cook these things at home. But then I realized, the more I imposed these restrictions on myself, the more I eat out, order in, and use every excuse in the book to have unhealthy food.
I've put on a ton of weight and am in a desperate attempt to atleast eat better. These days I even pack these healthy little tiffins to take to work, so I'm not just having an over dose of rice & dal (and hardly any veggies)
So these rolls have 4 components - rotis or tortillas, Greek yoghurt or hung curd as we call it in India, a julienne salad of carrot & zucchini, and grilled chicken breast.
Salad*
2 Carrots
1 small Yellow Zucchini
1 small Green Zucchini
1 tbsp. Olive Oil
Juice of half lime
Salt & pepper to taste
Julienne carrots & zucchinis using a julienne peeler (which I got online recently on Amazon and am very happy with) or just peel strips off using a peeler. Gently massage in oil, lime juice, salt & pepper.
Grilled Chicken*
1 Chicken breast - Fillet the breast in half lengthwise
Salt & Pepper to taste
Cook chicken on grill both sides till cooked. Cut on fillet into long strips.
Assembly
Place 2 tortillas/rotis on greaseproof paper.
Spread a spoonful of yoghurt on one side of the tortilla.
In a line drop 2 spoonfuls of your salad on the tortilla.
Place chicken strips on top of the salad.
Make a tight roll with the help of the greaseproff paper and twist around the ends so the whole thing stays in place.
*Keep aside leftover salad and chicken in fridge for another couple of rolls the next day. Makes making the rolls even quicker ;-)
**On second and third thoughts, most people must already be making stuff like this. But yeah, this could be helpful for the unfortunate soul who's not thought about it before.
